Recipe: QUAILS IN QUEUE DE CHARRUE TRIPLE

INGREDIENTS (for 4 persons)
- 4 quails
- 1 bottle of Queue de Charrue Triple 25 cl
- ¼ L chicken stock
- 1/8 L creme fraîche
- 150 g wild mushrooms
- 125 g chopped meat
- Salt and pepper
|
PREPARATION :
- Stuff the quails with the chopped meat
- Brown them
- Pour over the beer and stock
- Cook for 35 minutes and add the wild mushrooms
- Add the creme fraîche and leave to reduce
- Season to taste
- Serve with croquette potatoes
